O2 PAYG
If I buy a PAYG mobile from O2 will I be able to just take my current
PAYG SIM card out of my old N70 and put it into the new phone? What
about the SIM card that comes with the phone? Can I just bin it?

Provided the SIM in the N70 is an O2 one (or the the new phone that
your buying is unlocked) yes.

You can bin the new sim but might be worth keeping just incase you or
a friend needs it in the future?

Or the OP could follow the official way of upgrading if he so chooses:
