Local author says Uncle Sam is making us fat

The supermarket basket says it all.
Chips and cookies, soda and processed foods. No fresh veggies.
Nothing organic.

The story further unfolds with the people pushing those carts:
heavy, often unhealthy and lethargic
..
The statistics are the result:
rampant obesity, sharp increases in cancer, diabetes, heart disease.

Gene Ladd, owner of Pleasant Stone Farm in Middletown,
has been studying nutrition for decades.
He recently came across the Department of Agriculture's
food pyramid for fattening cattle.

"It began to dawn on me how similar it was to the human pyramid,"
he says. "But the very foods the Department of Agriculture tells us
to eat have nothing to do with nutrition or our health.
Money from the Treasury goes to the wealthy agricultural
conglomerates to create a surplus of grains.
The pyramid is made to have us use up the surplus.

"And if it makes us sick, nobody cares
because that's good for the economy, too."

Rather than money, Ladd says harmony with the Earth
and each other should be paramount.

That conflict is the basis for Ladd's new book,
"The Amber Waves of Gain: How the Government Makes Us Fat,
and the Spiritual Power to Lose It."

Refined grains, refined sugar, snacks are everywhere we look.
"Don't dare suggest we eat less," Ladd says.
"The lobbyists in control want a piece of the pie,
and the pie keeps getting bigger, just like the servings."

Throw into the mix hormones and antibiotics fed to livestock,
irradiation, chemicals used to process foods, and microwaves
to cook and what you have is a malnourished nation
that consumes about 10 pounds of chemicals a year per person
in its typical food choices and passes on some 200 chemicals
to its newborns through the umbilical cord.

What Ladd suggests in his book is a move back in time.

"Food, which can also be a gastronomic indulgence,
should be primarily used to replenish the Earth and our bodies,"
he says.

To be nourished, people need to return to whole foods
and add a good multivitamin and mineral supplement
with the essential fatty acids (Omega 3-6-9).
Women and teens also need more calcium.

His weight-loss plan, detailed in his book -- including recipes --
is built on these seven guidelines:

1. No sugar, high fructose corn syrup, honey, syrup or other sweetener. This 
includes all chemical artificial sweeteners
such as sucralose (Splenda) or aspartame. (Stevia is allowed.)

2. Only one serving per day of whole grain.

3. No trans fatty acids or hydrogenated oils.

4. Only one fruit or serving of berries or cherries per day.
Eat the whole fruit; do not juice it.

5. Eat only lean meat, poultry or fish. Trim off the fat.
Eat only organic or pasture-fed, free-range meat or poultry.
Eat only wild, not farm-raised, fish.
Choose free-range or organic eggs.

6. Have only one or two servings of milk or dairy per day.
Consume only organic milk in moderation.

7. Have no more than one root vegetable per day.

Don't have time to cook?
Ladd asks how much time is spent in doctors' offices.

Don't have time to give up the microwave?
He says you can turn any skillet into a quick steamer.
Put a small amount of water in the bottom of the pan.
Place the plate of food into it. Turn on the heat, cover,
and your meal will be ready in no time.

Can't afford organic foods?
Assess the processed foods in your cabinets
and the drugs in your medicine cabinet.

Although this might appear difficult at first glance,
Ladd believes the world can be changed in a heartbeat --
and that's where his spirituality comes in.

Ladd recommends spending a little time every day being spiritual,
but he doesn't presume to tell anybody how to do this.
Harmony includes all religions and no religion as well.

"When we are in harmony, we create our own healing."

Five questions ... with a health-conscious chef
Thyme to make a food change

   About five years ago in a hospital delivery room,
when a little girl named Courtney was born to Jamie and Marcus
Guiliano,  the seeds were planted that would grow to be the
Aroma Thyme Bistro in Ellenville.

The delivery room discussion was not about a business venture.

Rather, teacher mom and chef dad
wrestled with what they were going to feed their child
to give her a healthy start.

Marcus began his studies in the culinary program
at Sullivan County Community College.
His profession was further nourished at the famous five-star
Greenbriar Resort in West Virginia,
the prestigious Broadmoor in Colorado Springs, Colo.,
and in the acclaimed LaTante Claire in London.
Marcus' voracious appetite for knowledge
means his creations are not just about how to prepare a dish,
but also what's in it and what happens after it's consumed.

   How did your pursuit of healthier eating begin?

   While I was in Colorado, I visited local farmers.
Some of them weren't eating their own stuff.
What does that tell you? I visited slaughterhouses -
and was appalled.
And a book I read by Gary Null, "Get Healthy Now,"
really clicked for me.
   I started seeking out organic foods.
I eliminated refined sugar and white flour.
I became a vegetarian, although I'll eat certain fish.

   What other changes did you make?

   The only beef I serve in the restaurant is from Hill Creek Ranch,
where hormones and antibiotics are prohibited.
The chickens I use, Murray's Chickens, are free-range,
raised on a pesticide-free vegetarian diet.
I am not against sweet, just refined sugar.
So I use products like organic maple syrup.
I am not against fats, but I use different kinds of fats.
For example, olive oil is good - but not to sauté in.
Heat turns it into a carcinogenic.
Instead, I cook with coconut oil, avocado oil or macadamia nut oil.

   Have you noticed changes in yourself since altering your food habits?

   I was classically trained in fat, cream, butter and sugar.
By age 26, I was a good 40 pounds overweight.
I used to say that every new job came with 10 pounds.
My cholesterol was high, as was my blood pressure.
I also suffered from acid reflux, and the medications were not working.
I had chronic fatigue. And I was severely asthmatic -
could not go anywhere without my inhaler.
I've lost 35-40 pounds, and I'm not taking any medications.
I need less sleep. I have not used an inhaler in almost five years.

   What does your family eat in a typical day, and does it taste good?

   Our food really tastes good - except for the nutrient shake
with soy rice milk and bee pollen, and the wheat grass juice I drink.
As a matter of fact, most of my customers don't realize
they're eating a healthful meal - they come for the taste.
   A family breakfast might be oat flour pancakes with maple syrup
and a glass of coconut water - or a salad.
Lunch can be a vegetarian whole wheat wrap
or a piece of fish and a vegetable.
For dinner, perhaps some rice and beans.

   How can a person get started?

   Make a list of the worst foods in your life -
refined sugar, coffee, processed foods, white flour -
and vow to eliminate one a month, substituting something more healthful.
At the end of a year, a dozen changes will have been made.

   Whether you follow a strict diet of eggs and Tabasco,
or meditate by the light of a full moon,
we want to know what keeps you running - physically or mentally.
We're not looking for your standard gym routines;
we want to go beyond the usual.

Any unsuspected source of methanol, which the body always quickly
and largely turns into formaldehyde and then formic acid, must be
monitored, especially for high responsibility occupations, often with
night shifts, such as pilots and nuclear reactor operators.

In particular, the next review gives many recent mainstream
peer-reviewed studies that show formaldehyde,
always inevitably derived in the body from any methanol source,
including aspartame, causes endothelial injury,
ie, diabetic neuropathy -- among the most serious and complex
complications of diabetes.

protecting against methanol (formaldehyde) toxicity.

Many common drugs, such as aspirin, interfere with folic acid,
as do some mutations in relevant enzymes.

Dark wines and liquors, as well as aspartame, provide
similar levels of methanol, above 100 mg daily, for
long-term heavy users, 2 L daily, about 6 cans.

Methanol is inevitably largely turned into formaldehyde,
