Serves 4
Ingredients

    * 1 tbsp sunflower oil
    * 1kg fillet of beef
    * Salt and freshly ground black pepper

For the redcurrant jus

    * 100ml ruby port
    * 100ml beef stock
    * 2 tsp redcurrant jelly
    * 2 tsp sunflower oil
    * 3 rashers rindless bacon
    * 2 tsp cornflour

For the potatoes

    * 1kg medium potatoes, peeled and cut into roughly 2cm cubes
    * 2 tbsp sunflower oil
    * 25g butter
    * 2 tbsp finely chopped rosemary leaves
    * 4 garlic cloves, peeled and crushed

1. Preheat the oven to 190°C/Gas 5. To prepare the potatoes, half fill
a large pan with cold water and bring to the boil. Add the potatoes
and return to the boil. Cook for 5 minutes then drain in a colander
and leave to dry for a few minutes.

2. For the beef, put a large non-stick frying pan on the hob over a
medium heat and add 1 tbsp of the oil. Season the beef all over with
salt and pepper. Add to the pan and cook for a few minutes, turning
every so often until browned on all sides.

3. Transfer to a small roasting tin. Return the potatoes to the
saucepan and toss with the 2 tbsp oil until lightly coated. Scatter
around the beef and roast in the centre of the oven for 45 minutes for
medium rare beef. (Increase or reduce the times according to taste).

4. To make the redcurrant jus, put the port, beef stock and redcurrant
jelly in a small pan and bring to a simmer. Cook for about 15 minutes,
stirring occasionally until reduced to a thick, syrupy sauce.

5. Pour the oil for the jus into a frying pan and fry the bacon for
3-4 minutes until very crisp. Tip onto a board and leave to cool for a
few minutes then chop into small pieces and add to the port sauce. Mix
the cornflour with 1 tbsp cold water until smooth. Stir into the port
sauce and cook for a few minutes until thickened, stirring regularly.
Season to taste.

6. Take roasting tin out of the oven when the beef is cooked to taste.
Put the beef on a warmed platter and cover loosely with foil. Leave to
rest for 10 minutes. Mix the crushed garlic with the rosemary and
butter. Drop spoonfuls of the flavoured butter on top of the potatoes.
Turn to coat, then return to the oven and cook for 5 minutes more.

7. Carve the beef and serve with the potatoes and redcurrant jus.

Have you tried steaks extra rare? You basically sear it briefly on each
side (I also quickly do the sides where possible) and serve. It's
delicious- the only way I eat them. There's a 'bite' to the outside,
then the inside melts in your mouth.

It's how I order it in a restaurant too, and I've returned them when
overdone! The thicker the cut the better, as with anything I suppose! :)

I order books from the UK without any problem.  I use Playtrade, no
postage charges and I can pay in Euros.  The programme and the recipes
for that night are on Channel 4 but where the beef recipe should be,
is a notification,  that it has copyright and cannot be published on
the site.  It means the young man who cooked the dish copied it from a
published cookbook, I just want to know which one.

I would dear man if I was sure the recipe I want is included, it was
marked copyright on the Channel 4 website and they gave an alternative
which bore no resemblance to the cooked dish on the show,  duh, I give

That one passed me by, David.  Sorry.  No I haven't tried them like 
that, although I do like raw tuna if it is served by a sushi bar that 
knows what it is doing.  I shall give the steaks a go next Wednesday 
when our fish man comes round.
