Mostarda di Pesca

1 kilo peaches, Peel, stone and cut into chunks of 2-3 cm

500 gm sugar
237 ml apple cider vinegar
2-3 small, volcanic hot red chillies, split in half
3 berries allspice
3 cloves

one packet of powdered pectin suitable for one kilo of fruit


In a largeish pot put the sugar, vinegar and spices and bring to a boil. 
Boil them until they make a spicy syrup-- just a few minutes.  Stir in the 
peaches and boil for a couple of minutes.  Add the pectin and bring to a 
full, rolling boil again, and keep it there for 3 minutes.

Place a doubled clean kitchen towel on the work surface.  Turn off the heat. 
Ladle this into sterilized jars, clean rims with kitchen paper towels, add 
lid partly screwed on, then leave upside down on the towel for five minutes. 
After five minutes, turn the bottle right side up.  As they cool you should 
hear the click, click of the lids sealing.  Any that do not seal you may 
keep in the fridge.

Wait a couple of weeks to open and use so that the spices get distributed. 
When first done, the peaches taste mostly of vinegar.

Come Dine with Me.   
I watched the show from Leicester where a young man, a market trader,
forgotten his name, cooked what looked like fillet steak in the oven.
I have tried to find his method by looking at the website but it says
it can't be published for copyright reasons.  I presume he used a
recipe from a cookbook, I would love to know which one.  Anyone watch
the prog and know where he got the method/recipe from?

Hi Judith,
They always mention that you can look the recipes up on the website - but I 
guess you would need to know the series number and episode number....

I checked the website thanks.  I found the series but they said they
couldn't publish the recipe due to copyright problems??  I think this
means it was the recipe from a chef that had been published?  I dunno,
did you see the programme?

Guisi, thank you very much, I have printed this out and it is going
into my new organised folder:-)  I checked in my spam box and indeed
it was in there, how on earth it got there I don't know.  It was next
to adverts for Viagra!!!
