Recipes from his memoir:-
Blackened bass
Stuff the whole fish with fennel and lemon and BBQ over vine trimmings.
Lamb
score a leg of lamb and insert garlic and rosemary in the cuts.
cook slowly
deglaze and make a sauce of pan juices and butter, added cube by cube.
