That looks really yummy. Shame my omelettes could be used to sole
shoes! But this inspires me to give it another try.

Heh. I think you would have been luck with this as it doesn't have to be
incredibly light and fluffy.
David likes his made with the remains of spaghetti with sauce:)

Yes, I think I could manage a Frittata without killing anyone. Pasta,
eh? If only I could get Ray to enjoy it!

It was leftover roasted summer veg, like aubergine, capsicum, chunks of
onion, whole garlic, zucchine and added diced capsicum and fresh onion.
Then for this big one for antipasto for 6 plus two children, 4 eggs, pinch
of cayenne chili, spoonful of cold water and two handsful of grated
Parmigiano. Salt yes.
Sacha, once the oil has sauteed everything to a nice turn, add the egg and
gently lift the edges to let raw run under. When it isn''t runny, flip to a
large plate then slide in to cook other side briefly. Serve at room temp or
slightly warm, and the elderberry vinegar was much appreciated with it.

Fantastic, Giusi. Tonight is Shepherd's Pie at special request of one
of our young - totally unseasonal but a family favourite. Tomorrow
will be frittata alla Giusi! Thank you.

I have taken note of the ingredients. With my own home produced eggs to
