And here's one I made earlier   
Being troubled with the Big D myself, here is one of my favorite cakes I can 
eat with a fairly clear conscience:

The original recipe for an All-Bran fruit loaf/cake follows but I found it far
too sweet.

BRAN FRUIT LOAF
(For 2lb tin)

100g All Bran
100g Caster Sugar
275g Mixed Dried Fruit
300ml Milk
100g SR Flour

Put All Bran, sugar & dried fruit into bowl, mix, add milk, leave for 15
minutes.

Sieve in flour, mix well, pour into well greased 2lb loaf tin. Bake in
moderate oven 180C for about 1 hour.

Turn out immediately and allow to cool. Serve spread with butter

That's the All-Bran way. You can easily cut back on the sugar and still have a 
very sweet loaf/cake.

I now use no sugar, add 1 beaten egg, a couple of spoons of ground almonds,
couple of drops of almond extract, and a splash of rum or brandy. It ain't no
Xmas Cake but it's better than a kick in the almonds. (And I don't always
spread it with butter.)
