I haven't looked much this weekend but all I seem to have is a lot of

I am here.  The whole page is crosspostings and the particpants find it 
funny to repetitively fake posts by the awful Corey.  One by one they have 
become more and more filthy mouthed and therefore killfiled.  Corey has been 
killfiled 10 times by now, but somehow manages to get himself back on the 
page.

It's discotaging, and especially since I have something to post and don't 
want to while all this crap is going on.

The thing is there is an element of truth in what he says. The masses
are all obsessed by possesions and celbrity. As long as they have
their mega wide screen telly to watch Coronation Enders and spoit
overpaid brats kicking a bag of wind about, the latest whizz bang
flash mobile phone and the biggest heaviset most ugly new car in the
neighbourhood to run the little darlings ten minutes walk down the
road to school they don't care how poor the rest of their lives are.
Jamie was bemoaning the fact that most families dont sit down to a
meal together any more, the loss of traditions and such. Despite the
fact he was plugging a new series on French TV and being deliberately
controversial there was much in what he said that bore thinking about.

Sure- he does have a point, but if I were him I'd be a bit careful.
Sainsbury's sell some of the crap to enable people to have TV dinners
(as well as the good stuff) that he complains about. I don't know if you
saw the TV programme a week or so looking at the food industry- in
particular, the rubbish that goes into so-called poultry for restaurants
etc.- Gordon Ramsay came up quite a bit as he's done some publicity work
for one of the suppliers.

I must plead guilty of that today. I made myself a very good pasta dish 
yesterday, but ended buying a spag bol from Tesco. I still have the 
nasty taste in my mouth now. I'll not do that again and this was my 
first experience of eating spaghetti and I found it very time consuming. 
Never again will I eat it, but I do like all other forms of pasta.

Thanks for translating, but I still don't know why it would take longer nor 
why that makes a difference!  Almost everyone eats too fast.

Well, most pasta used in Northern Europe are small pieces of dough with a
sauce that can be easily put on a ladle or spoon and than eaten.

Spaghetti are long thin strands, and it's a neat trick to get those on a
spoon, and eat them in one bite. It takes time to either eat or learn the
trick. A bit like learning to eat with chopsticks.

I think that is what Dave was referring to.

Corey?  Unmistakabely a troll.  Asked nice won't stop.  Does it more and 
more often to get a bigger rise from others.  An attention whore for sure.

The only uncrossed posts I have seen have been uncrossed by someone else and 
then Corey responded and didn't add back the bikers or whatever.

Agreed, it was not spelled out at all clearly, looking back at my post.

What I meant was the time it took me to eat it. Never having eaten 
spaghetti before, it would take me some time to learn how to get it on 
my fork. I was discussing this at lunch time and I was advised to use a 
spoon as well as a fork to wind it up.

I love pasta and eat it when my wife is away like this week. I can make 
myself a meal of it and sit down and enjoy it. Wife does not like it at 
all, g children practically live off it.

I hope that makes it clearer  :-)

I think that just delays your learning to wind it up with the fork vertical. 
And slow is better anyway.

It sounds like you may be in a rut for saucing?  With all the many ways to 
make pasta mo one can hate all of them, unless they are gluten allergic.

It was the sauce that was too thick to get to wind the spaghetti where I 
failed. Next time I will make my own and make sure it is a bit thinner 
and more fork friendly  :-)
Also, as I wrote, it left a very bad aftertaste in my mouth. None of our 
cooking does that.
Daughter makes it regularly, so I will ask her to make some next time I 
am down in that end of the country. She doesn't bother with any 
additives other than what is in the authentic recipe.

I don't know if you are familiar with the British tinned pasta, but all 
she will eat are those 4 cm square pockets of pasta filled with meat. (I 
can't think what they are called at the moment. Lots of stress at this 
end due to relatives' deaths).

Yes, I an. As far as the sauces go, most of my recipes have gone 
missing, especially the one made with double cream and blue cheese. I 
love that one with pasta. But, and this is a big but, I can't give her 
any sauce that contains tomatoes, it gives her back muscle spasms.

With your last sentence above, you have given me an idea of how to get 
her to eat it. It's all in the sauce, stupid me, why didn't I think of 
that before! I'll give it a go when life settles down again.

Before I wrap up this post, how do I stop a lasagne from drying out 
during cooking. Both myself and daughter usually end up with something 
that is too dry. Should we be soaking the dried sheets in something 
before baking?

Ravioli, but never from a tin!  Buy some fresh or frozen from the market and 
serve them very simply in good, hot broth and a sprinkling of grated 
Parmigiano on top.  Try tortellini and capelletti, too, which are smaller 
stuffed pastas, try any of them with pesto Genovese.  Very satisfying and 
simple foods, and there are vegetarian versions or meat versions.

Go to my blog as addressed below.  I have tons of recipes for pasta many 
without tmatoes.  My favorite is made with lemon, cream, Parmigiano!  I also 
have links to lots of other cooks who make fine Italian food much without 
tomatoes.  Use the search box at the top by entering pasta and you should 
get mor ethan you can handle.

Dried pasta should be boiled a bit before assembling.  If you buy the thin 
fresh sheets you don't need to, but you should make sure there's plenty of 
fluid in the preparation.  Again, there are many lasagne, but our local 
version is made with just a thin tomato sauce and some besciamella or 
bechamel/white sauce and a sprinkling of cheese.  It's meant to be light as 
air.  The popular USA versions are terribly heavy and jammed with things and 
I always dreaded lasagne for that reason.

I'll try to find a good market up here in the North West of England and 
see what I can find. (I live in a very small market town that does not 
sell fresh or frozen pasta to my knowledge.  :-(

I started to browse it tonight, it looks like I might have to brush up 
on my Italian to get the best out of your blog.  :-)

Thanks for your advice, I'll take look at it again when things quieten 
down around here. Just spent the last 5 days getting rid of the glass 
from a greenhouse and cleaning up after. Tomorrow is house cleaning day 
and on Monday I will have to drive 532 miles to pick up and bring back 
my wife. Then to finish the week, were are going to a funeral about 200 
miles each way. Normally, I can put my feet up and relax when she is 
away :-(

If you are interested in a project this winter, teach yourself to makle 
stuffed pastas.  Start by making them very big and a bit formless, then as 
you get the hang of it you can get tighter and neater and then finally the 
very lovely little rings and hats.  Fillings are extremely varied, saucing 
similarly very varied.  There is no other single thing you can make that 
will be a bigger treat to your "girls" of all ages.

Although I use the Italian names for dishes, and that is because peple eat 
something in a restaurant and want to know how it's made, the recipes and 
explanations are all in English, or American, anyway.  Only the weekly Made 
in America series is written in Italian after the English version.

Then that's American/British style.  It's based on the feast day foods of 
the poorest parts of Italy whose peoples first emigrated from Italy. 
Sicily, Campania, Calabria... they combined everything in one dish and that 
was all they got to eat so they made it as rich as possible-- although not 
as rich as these copies in rich countries.  In the rest of Italy the pasta 
courses are lighter, because they were not all one got to eat.  I recently 
ate a lasagne made with thinly sliced artichokes fried then layered with 
thin pasta, a bechamel and some Pecorino-- what bliss!

I tell you what Dave... you have the best teacher in the world for Italian
food and if she is taking an interest in your cooking................ I hope

I am well aware of that.  :-)))
There some very good cooks / chefs about on this ng and I have 
identified those that I can side with, but not pester.
My Italian was quite passable in my teens and twenties, but it was only 
tourist stuff. It has been a wish of a lifetime to visit Italy to sample 
all the regional foods, but I would have to leave my wife at home, as I 
can't bring her round until I learn to do the basics. At the moment.

Giusi has been very tolerant with me and so far I have learned quite a 
lot about the basics.
