when he is slicing he adopts a bullfighters stance "I always do, even when
i'm alone, its a way of showing respect. I think of ham as a living product
with which I engage in a dialogue and my knife is the instrument through
which we communicate......

When already a cuchillo de oro, he was slicing a ham in a demonstration and
a stranger told him he was doing it all wrong. "you are using it in a
horizontal position and it should be at an angle to get the flavours of
both sides of the ham". As a result he took hams to a monastary and did not
emerge until he had reinvented his technique.

Freind of Juan Carlos, he has photos of himself with Cameron de la Isla and
Curro Romero (oh and George Bush).

He has two ham slicing schools and a third on the way, you can read "El
Jamon iberico en la gastronomica del siglio XXI"

Forget Borough Market, this is people who care about food, we have a way to
go yet.
