M&S   
Just thought I'd alert you to the M&S £10 dinner deal this weekend. It's
a bit of a limited choice, but you can buy a 'side', main, dessert and
bottle of wine for £10. We picked up salad, a roast chicken, raspberry
panna cotta and a bottle of red. Will be handy for a quick meal tomorrow
night...

I'm thinking of making aji de gallina with the chicken. Excellent spicy
Peruvian recipe...

Oddly, I made that twice last week for two separate lunches.  Since I can't 
get aji peppers, I use various TexMex ones and it is different each time. 
Both times were good, but one very mild and the other quite hot.

I always boil a hen for it, though.  I use some of the broth for the sauce. 
I really do love it, but it makes work of your workfree £10.

Make the chicken dish early tomorrow morning and then leave a pot of
it on the doorstep so that we can collect en route to the Lakes ;-)

I was going to ask where to get the Aji! I can get Scotch Bonnets in large 
amounts very cheaply from the local Asian Grocer so must try this! The 
recipe sounds great.

I didn't say workfree, I said quick, and it will be!

Even in Peru, a lot of cooks actually use aji paste. I have a good
supply of jars of the stuff, luckily! I like all kinds of peppers, but
there's something specific about aji peppers which fortunately is
retained even in the paste form.

It worked really well in the end. I didn't serve it with potatoes in
addition to rice (though I did include the boiled egg, as well as the
rice) so in that respect, many Peruvians wouldn't recognise it. I think
that aji amarillo is crucial as part of the dish- you really taste the
difference- but our supply will run out in a few months, so I may try
other hot peppers before I can replenish again on a US visit in
December.

As it was another hot day, and dinner on the terrace, I reheated
yesterday's leftovers, but added some extra milk and a bit of white
wine. Oscar preferred it to yesterday! :)

You might be surprised to know that the recipe I learned from Oscar's
mum adds grated parmiggiano. I've got a decades-old Peruvian cookbook
(actually, a copy of one) and it doesn't mention that addition.

Too bad as that contrast in flavor is so amazing-- and of course the potato 
is terrifically Peruvian whereas the rice is a transplant.

True enough. And it was red rice too, even further from the norm there.
I just didn't have potatoes to hand, and couldn't be bothered going to
buy them. However, that's got me minded to have papas a la huancaina
tonight as a starter- perfect for this warm weather!

Yes, I'd noticed many do. This one certainly doesn't, funny.
