Indian Food made easy
Tonight was a excellent programme with fish being the main ingredient. See
here for details and recipies.

<Puzzled> But that was on BBC2 on Monday - where did you see it
tonight?

It was interesting though, as have been most of the programs in the
series so far. Most interesting to me is tha fact that she rarely
seems to bother making complex masalas in advance, seeming to prefer
to use just a few whole or powdered spices as appropriate.

I would say that the more traditional methods of spicing would be
'added as appropriate', and not in one load, although there is an
alarming trend in India to use premade masalas appropriate to just one
dish. This method may save time, but as spices should be added at
different times (for different reasons) the end result is unlikely to
be as impressive.

Pre-packaged spice mixtures do seem to be very popular in
Indian grocery stores around here, often in stores most of whose
customers look like they might be of Indian descent. The variety
of different types is amazing. There's quite a good store that I
often go to that is the only place I have seen *kilogram* cans
of curry powder! Weep you purists!
