It was interesting though, as have been most of the programs in the
series so far. Most interesting to me is tha fact that she rarely
seems to bother making complex masalas in advance, seeming to prefer
to use just a few whole or powdered spices as appropriate.

I would say that the more traditional methods of spicing would be
'added as appropriate', and not in one load, although there is an
alarming trend in India to use premade masalas appropriate to just one
dish. This method may save time, but as spices should be added at
different times (for different reasons) the end result is unlikely to
be as impressive.

of different types is amazing. There's quite a good store that I
often go to that is the only place I have seen *kilogram* cans

I would say that the more traditional methods of spicing would be
'added as appropriate', and not in one load, although there is an
alarming trend in India to use premade masalas appropriate to just one
dish. This method may save time, but as spices should be added at
different times (for different reasons) the end result is unlikely to
be as impressive.

I would say that the more traditional methods of spicing would be
'added as appropriate', and not in one load, although there is an
alarming trend in India to use premade masalas appropriate to just one
dish. This method may save time, but as spices should be added at
different times (for different reasons) the end result is unlikely to
be as impressive.

'added as appropriate', and not in one load, although there is an
alarming trend in India to use premade masalas appropriate to just one
dish. This method may save time, but as spices should be added at

seems to bother making complex masalas in advance, seeming to prefer

I would say that the more traditional methods of spicing would be
'added as appropriate', and not in one load, although there is an
alarming trend in India to use premade masalas appropriate to just one
dish. This method may save time, but as spices should be added at
different times (for different reasons) the end result is unlikely to
be as impressive.

I would say that the more traditional methods of spicing would be
'added as appropriate', and not in one load, although there is an
alarming trend in India to use premade masalas appropriate to just one
dish. This method may save time, but as spices should be added at
different times (for different reasons) the end result is unlikely to
be as impressive.

I would say that the more traditional methods of spicing would be
'added as appropriate', and not in one load, although there is an
alarming trend in India to use premade masalas appropriate to just one
dish. This method may save time, but as spices should be added at
different times (for different reasons) the end result is unlikely to
be as impressive.

series so far. Most interesting to me is tha fact that she rarely
seems to bother making complex masalas in advance, seeming to prefer
to use just a few whole or powdered spices as appropriate.

I would say that the more traditional methods of spicing would be
'added as appropriate', and not in one load, although there is an
alarming trend in India to use premade masalas appropriate to just one
dish. This method may save time, but as spices should be added at
different times (for different reasons) the end result is unlikely to
be as impressive.

Indian grocery stores around here, often in stores most of whose
customers look like they might be of Indian descent. The variety
of different types is amazing. There's quite a good store that I
often go to that is the only place I have seen *kilogram* cans
of curry powder! Weep you purists!

I am certain, when I first visited an Indian store, in the Gorbals
area of Glasgow, in 1953, you ladled out the Spices & curry powder
from mound ( 28 lbs. ) tins, as exported from India

Well the EC and the Indian government between them have killed that one
stone dead.
I looked into importing my own high quality spices in bulk (100Kg lots) from
India with a view to selling them.
Because of EC and Indian regulations it's almost impossible to import in
anything more than trivial quantities, and the major operators aren't
interested in anything but huge quantities.
They claim there's no market in the UK for high quality spices in the
quantities they want to ship. Of course they want to ship everything in 20
tonne lots in sealed containers...
The EC insist that everything imported from India is sterilised in such a
way as to kill most of the flavour, and certificated so highly and by such
costly laboratories that it isn't actually worth importing less than several
thousand pounds worth of any single spice...
The only exception is Kashmiri saffron, where people can put a twenty
grands' worth in a suitcase, fly to the UK, walk through customs (no VAT,
bugger all duty) sell it for double that at this end, and still leave a
decent mark-up for the retailer.
But, of course, Kashmir is off limits to Europeans so you've got to buy it
from an agent, and the chances of getting ripped off are reasonably high.
The only way people are going to get to eat Indian food as good as the food
served in India is to get to know someone who can send them the real spices
used there, because the system prevents you from buying decent spices here.
