Elaine, I have a lot of really good recipes using curry leaves.  Is there 
some specific type of recipe you're interested in (rice dish, entree, etc.)? 
The only problem is, as you might remember, my recipes are in those *other* 
measurements!  :)

Measurements? Paah, who needs them? I always reckon my greatest
successes use that most simple of measures: "some".

Elaine, try throwing a few curry leaves into hot oil/ghee with or
before any spices/masala in almost any of your favourite dishes,
particularly any that use coconut cream as their main liquid source.
Not quite so noticeable in tomato-based sauces, and their flavour can
be masked somewhat by heavy use of fresh coriander.

Well there's no fishmonger anywhere near but the nearest supermarket 
does have a small fish counter - limited choice but can get salmon and 
prawns.

Or something with chicken.

No fresh coconut available but can get canned  coconut milk.

Main dish preferably - but a veg or rice dish also appreciated.

Just add them as a seasoning/condiment to any Indian vegetable dish.

A modified version of Pat Chapman's Tarka Dal

Serves: 4

2 or 3 tablespoons mustard blend oil or sunflower oil
1 teaspoon turmeric
1 teaspoon peppercorns
1 large teaspoon cumin seeds
4 tablespoons dried onion flakes
200g Masoor dal (red lentils)
Up to twice its volume of water
1 teaspoon curry paste or pickle
15 to 20 fresh or dried curry leaves
Salt to taste

1. Soak the lentils for a couple of hours, rinse well and boil until
soft.  (Do NOT add salt)
2. Fry the turmeric, pepper, cumin and onions to golden the tarka.
3. When the lentils are soft, mix in the tarka with the curry paste,

Dried onions need care when used in this way, there is a substantial
risk of burning.  Since the lentils take ages, there's plenty of time
to cook fresh onions the traditional way - slowly - in a separate pan
and add them to the lentils with the fried spices.

IME, this dish freezes well and can be used to 'bulk up' a reheated
frozen meat curry when perhaps there isn't enough meat!

OK, Elaine, I will post some recipes separately.

Can you get dessicated coconut?  How about frozen grated coconut?  I keep 
both in the house because I do not enjoy grating fresh, whole coconuts! 
Canned coconut milk... I have a few Indian and Sri Lankan recipes using it, 
but more SE Asian... but let me see.

Thanks for the criteria.  I will post some nice ones now.  The fresh curry 
leaves are ADDICTIVE!  I keep mine in the freezer, BTW.  Just be careful 
when taking them out of the freezer and throwing them directly in hot oil - 
they will pop BIG time.

Dried ones are not much good, IMHO, and I don't think you are 
likely to get fresh ones on the net. That's unfortunate because 
it should be possible with some sort of express mail and an 
insulated container to minimize heating in transit. The ones I 
buy are sold in sealed plastic packages and kept in the store 
refrigerator (not the freezer).

Like most herbs, it's not so much that they're not 'good' once dried,
but that they're 'different'. They lose something of the immediacy and
the longer you store them the more the pungent aromatics tend to
disappear.

I've found they keep quite well in a plastic bag in the fridge,
although I don't keep them sealed. After a month or so they're getting
dry-ish, but at this point still retain a level of freshness in use.
Much longer storage gives similar results to comercially-dried ones.

insulated container to minimize heating in transit. The ones I 
buy are sold in sealed plastic packages and kept in the store 
refrigerator (not the freezer).

but that they're 'different'. They lose something of the immediacy and
the longer you store them the more the pungent aromatics tend to
disappear.

Just a question - if you have a greenhouse in the UK, would it be possible 
to grow the curry leaf plant ?

Dried ones are not much good, IMHO, and I don't think you are 
likely to get fresh ones on the net. That's unfortunate because 
it should be possible with some sort of express mail and an 
insulated container to minimize heating in transit. The ones I 
buy are sold in sealed plastic packages and kept in the store 
refrigerator (not the freezer).

Like most herbs, it's not so much that they're not 'good' once dried,
but that they're 'different'. They lose something of the immediacy and
the longer you store them the more the pungent aromatics tend to
disappear.

I've found they keep quite well in a plastic bag in the fridge,
although I don't keep them sealed. After a month or so they're getting
dry-ish, but at this point still retain a level of freshness in use.

If you can grow citrus (of almost any kind, I think), you should be able to 
grow curry leaves.  Curry is a member of the citrus family, and pretty much 
takes the same requirements.  You can bring it outside in the summer if it's 
warm enough where you are, although I don't think it wants very wet 
conditions.  I have also heard that they are heavy feeders - they like a lot 
of fertilizer.

If you can get a plant, I'd go for it!  I also understand you can root small 
branches and get it to grow that way, but then, that is the problem - many 
of you cannot get the fresh stuff.  I understand one should stay away from 
seeds, that they really are very difficult.

Dried ones are not much good, IMHO, and I don't think you are 
likely to get fresh ones on the net. That's unfortunate because 
it should be possible with some sort of express mail and an 
insulated container to minimize heating in transit. The ones I 
buy are sold in sealed plastic packages and kept in the store 
refrigerator (not the freezer).

Like most herbs, it's not so much that they're not 'good' once dried,
but that they're 'different'. They lose something of the immediacy and
the longer you store them the more the pungent aromatics tend to
disappear.

I've found they keep quite well in a plastic bag in the fridge,
although I don't keep them sealed. After a month or so they're getting
dry-ish, but at this point still retain a level of freshness in use.
Much longer storage gives similar results to comercially-dried ones.

If you can grow citrus (of almost any kind, I think), you should be able to 
grow curry leaves.  Curry is a member of the citrus family, and pretty much 
takes the same requirements.  You can bring it outside in the summer if it's 
warm enough where you are, although I don't think it wants very wet 
conditions.  I have also heard that they are heavy feeders - they like a lot 
of fertilizer.

If you can get a plant, I'd go for it!  I also understand you can root small 
branches and get it to grow that way, but then, that is the problem - many 
of you cannot get the fresh stuff.  I understand one should stay away from 
seeds, that they really are very difficult.

Like most herbs, it's not so much that they're not 'good' once dried,
but that they're 'different'. They lose something of the immediacy and
the longer you store them the more the pungent aromatics tend to
disappear.

I've found they keep quite well in a plastic bag in the fridge,
although I don't keep them sealed. After a month or so they're getting
dry-ish, but at this point still retain a level of freshness in use.
Much longer storage gives similar results to comercially-dried ones.

If you can grow citrus (of almost any kind, I think), you should be able to 
grow curry leaves.  Curry is a member of the citrus family, and pretty much 
takes the same requirements.  You can bring it outside in the summer if it's 
warm enough where you are, although I don't think it wants very wet 
conditions.  I have also heard that they are heavy feeders - they like a lot 
of fertilizer.

If you can get a plant, I'd go for it!  I also understand you can root small 
branches and get it to grow that way, but then, that is the problem - many 
of you cannot get the fresh stuff.  I understand one should stay away from 
seeds, that they really are very difficult.

Like most herbs, it's not so much that they're not 'good' once dried,
but that they're 'different'. They lose something of the immediacy and
the longer you store them the more the pungent aromatics tend to
disappear.

I've found they keep quite well in a plastic bag in the fridge,
although I don't keep them sealed. After a month or so they're getting
dry-ish, but at this point still retain a level of freshness in use.
Much longer storage gives similar results to comercially-dried ones.

Just a question - if you have a greenhouse in the UK, would it be possible 
to grow the curry leaf plant ?

If you can grow citrus (of almost any kind, I think), you should be able to 
grow curry leaves.  Curry is a member of the citrus family, and pretty much 
takes the same requirements.  You can bring it outside in the summer if it's 
warm enough where you are, although I don't think it wants very wet 
conditions.  I have also heard that they are heavy feeders - they like a lot 
of fertilizer.

If you can get a plant, I'd go for it!  I also understand you can root small 
branches and get it to grow that way, but then, that is the problem - many 
of you cannot get the fresh stuff.  I understand one should stay away from 
seeds, that they really are very difficult.
