lemon juice in curries
hi all
i really like lemon juice in a curry when just finished cooking
I squeeze a half a lemon to four servings
Lemon juice does not seem to feature in recipes
I generally do this in a resturant style curry i make
(kind of madras with coconut & yoghurt)
any thoughts

I don't suppose that adding a relatively small amount of lemon
juice at the end of the cooking will curdle the yoghurt or milk
but have you tried the more authentic amchur (powdered dried
unripe mango) or tamarind (obtainable as dried pods or even a
dry powder: "DryTam")? I'm not sure which would be more
authentic in Madras.

I've tried the juice and rind of half an orange for a pseudo-Caribbean
style curry. It seems to work!

I've got a number of recipes for dhansak and I guess 50% use
lemon juice and the rest seem to rely on the acidity of
tomatoes.

I find lime juice, lemon juice and mint help to cut the fatty feel in
the mouth of some foods ... particularly cheap mince

Either tamarind or amchoor (mango powder) are used to add a sour note.
