I saw one in the Lidl car park on Dalry and had a chat with its owner - he
was very happy to let me take it for a spin, even with his daughter in a
trailer out back!
I'd love one if ever a) I had need of a tandem and b) had anywhere to put
it.

As the stoker in my case is Mrs. Hall, she has control over
everything.
But really, as Pete says, I have it all. She does have the option of
hanging on to the bars, either side of the seat, for grim death. And
ringing the bell.

The stoker also has the option to peadal or not. There's a freewheel
in that part of the drivetrain.

I saw one in Germany last week.
Also a friend had one. His new girlfriend didn't like cycling so he
bought one to try to get her into cycling. It didn't work and the
machine was hardly used. Just before he died from pancreatic cancer
in January this year he sold it on ebay for £300.

As the stoker also doesn't need hands or eyes for steering they may be the
one reading the map and thus controlling where the route goes?

Partly correct. She'll read the map and tell me where the route goes.
Whether I follow the instruction is another matter.
Some years ago Mrs. Hall was captain and daughter was stoking.
Foolishly we let her read a book at the same time, resulting in
minimal pedalling effort. The book was then confined to the pannier.
