New strings!   
I restringed my guitar with Ernie Ball Power Slinky strings (11, 14, 
18P, 28, 38, 48) and my sound is now officially sh*t! The treble strings 
are nice but the wound strings sound way too nickel-ly and bright, to 
the extent that it drowns out the music. Would I be better off trying a 
different brand or just persevering with the Ernie Balls until they go a 
bit duller?

What kind of guitar is it? The wound strings seem light by about
.004mm - a normal 11 gauge set would be 11-52's (normal for me at any
rate).

I'd play them for a bit & see what happens. You can bring the middles
& bass up on your amp, but you'll have to fart around a bit.

I haven't used Ernie Ball's for decades. Try and find some GHS, or
have a go at D'Addarios - my default-always-reliable-last-a-good-while
strings. YMMV.
