seconded!
Sushi in Vancouver was great (in most places) and cheap too. A real 
alternative fast food item, very tasty! (for me). I'm not a big fan of raw 
fish, although I eat it sometimes, and their menu contained a lot more than 
that. If something like that opened here, I'd love it!
Not sure how successful it'd be in Edinburgh, but I think to make it work it 
has to be clear to people that Sushi does not equate only raw fish. I think 
that's what put most people off.
