My gut reaction without too much thought.

1. Focus on the 'Waitrose' areas of town.

2. As Alan said, understand why Yo Sushi failed. It had the clout to 
succeed, a good location, home delivery but still couldn't survive in 
Edinburgh.

3. Find a good local supplier for fish - Eddie's fish market springs to mind.
