No bass on the menu ?
Hi all...despite having sold many bass to a few of my local Chinese
establishments (mainly the ones that were too small to take home) how
come I never see any bass dishes on the menu. What do they do with them
? I'm sure a combination of chinese culinary know how and the sweet
taste of young bass would be a great combo ???

I trust the bass that were too small and were sold to the Chinese were above
the minimum size limit.
When anglers are arguing for greater protection of bass stocks, taking more
than one or two fish for one's own consumption is inexcusable.

One of the pro line fishers brought in a dozen for 90 minutes at sea earlier
this week. He's using artificials atm and there wasn't time for him to get
more than a few miles from port (Weymouth).
If the OP is selling without a licence btw it won't be long before the FI
takes an interest.

You have always (well at least for several decades) needed a licence to
sell any sea fish, and any boat which catches fish FOR SALE must be
licensed (and registered with those port letters and numbers you see on
commercial boats)
Sea "anglers" have sold Bass round the back door of Hotels and
Restaurants for a long time and it was partly because of illegal Bass
sales that the commercial boys made sure a while back that boat Anglers
were included in any fishing bans (like the ones on Cod in the English
Channel a few years back) when UK quota was finished.
AS FAR AS I KNOW that does not apply now to anglers catching for their
own consumption, even where there's a ban on catching a species for
sale.
