In a couple of weeks time I want to go from London Victoria to Sheerness to
do some genealogy investigation and then go on to Ramsgate the same day in
order to catch the Southern Belle excursion next morning. Will I be able to
get one ticket which allows me to do this (using my Senior Railcard) or will
I have to buy two separate tickets ?

Nice to see a fellow reader going on the Southern Belle, although I am
looking at joining it at Waterloo rather than the ultra early Ramsgate
start.

You'll need two tickets - either a CDS London to Ramsgate (it is valid for
Break of Journey) plus a CDR Sittingbourne - Sheerness, which is probably
cheaper than a CDS London - Sheerness plus a CDS Sheerness - Ramsgate.

You'll need a single from London to Ramsgate and a day return from 
Sittingbourne to Sheerness.

As you can break your journey on a Cheap Day or Standard Day Single then 
you do so at Sittingbourne and use the day return to get you to 
Sheerness and back, and then resume your single journey to Ramsgate from 
Sittingbourne.
