I used to like a mixed vegetable curry in which the taste had been absorbed into the veg.
(Especially the potato's) I have forgotten how I used to cook this.
Most veg curries seem to ask for the veg to be boiled in water before adding spices but
I find this stops the flavour from being absorbed.
Does anyone know ...

Indian girl won tonights round of Masterchef with a nice selection of food.
Problem is, I do not think she should have won it as I think that, as she
freely admits, can only cook Indian. Should have been one of the others with
a wider knowledge of cooking.

Do all garam masala recipes use ground-up cinnamon sticks? I would prefer
to use a good grade of cinnamon already ground and not put my grinder thru
such a strenuous grinding.
Does anyone have any hints or recipes using already ground Vietnam or Ceylon
or Chinese cassia cinnamon?

I have a rajma recipe that I am making today that calls for nigella seeds.
I have on hand 'black seeds' which I understand are nigella seeds. I
understand that black seeds, nigella seeds, black onion seeds, and kalonji
are all the same.
I also have on hand some seeds marked "leek seeds," which look similar ...

Hi folks,
I have tried for years to make a Dosa without success. Maybe it is
because it is generally cold here in the UK and the batter mix does not
ferment in the 6 hours or overnight.
I never get that small pinhole bubble effect in the cooked pancake.
